The Pennsylvania Department of Agriculture, 866-366-3723, uses a risk-based inspection reporting process for restaurants and other food handlers.

A&M Pizza, 39 Market Square, Manheim, July 5. Pass. Observed food employee in main production area not wearing proper beard cover. Meatballs marinara was held at 125 F, in cold hold unit, rather than 135 F or above as required; corrected. Observed thermometers for ensuring proper temperatures of food to not be available or readily accessible in two bain-maries (pizza and back prep). Observed old and unused equipment (lettuce chopper) stored in main production area that should be removed from food facility. Observed mops not being hung to air-dry.

Top of dishwasher and three-bay sink observed with build up of filth and food residue and not cleaned before use, and frequently throughout the day. Assorted food containers on the drying shelf were observed to have food residue and were not clean to sight and touch; removed for cleaning. Observed dirty food containers, stored wet in a manner that does not allow for draining and/or air-drying (wet-nesting). This combination can promote bacteria growth; removed for cleaning. Hand-wash sink in dishwashing area had buildup of food residue at the start of the day.

Genki Sushi, 1565 Manheim Pike, Lancaster, July 3. Pass. An employee’s open beverage container was observed on top of the bain-marie, a food preparation area. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 5 ppm, and not 50-100 ppm as required. The facility has set up the three-compartment sink for the sanitizing step until the dishwasher is repaired.

Roma Pizza Restaurant, 15 W. Main St., Ephrata, July 2. Pass. Food and food related items were stored below sewer lines in the basement area exposing them to potential contamination. Container of sliced sausage was held at 47 F, in the pizza area, rather than 41 F or below as required; voluntarily discarded. Three-bay sink observed with build up of oily residue and not cleaned before use, and frequently throughout the day. Several food containers on the drying shelf were observed with food residue and were not clean to sight and touch; removed for cleaning. Old food residue and scrubbing pads observed in the hand-wash sink, indicating uses other than hand-washing. Basement of the food facility is extremely dirty, dusty, and in need of cleaning.

Pho Pasteur 3, 2204 Columbia Ave., Lancaster, July 1. Fail. The person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. The person in charge has failed in their managerial duties in not ensuring temperature control for safety foods are stored at 41 F. degrees or colder. Beef bones for bone broth, observed in standing water in the three-compartment sink. Cooked beef, raw beef, shrimp, pasta and pork, and raw shell eggs were held at 48-56 F, in the top cooling unit across from the cook line, rather than 41 F or below as required; repeat violation, Nov. 17 and Dec. 2, 2022, and June 15, 2023. A gravy/sauce was held at 55 F, in the Traulsen reach-in cooler. The ambient temperature of this unit was 60 F. Temperature-control-for-safety foods are not permitted to be stored in this unit until it maintains a cold holding temperature of 41 F or colder. Observed cardboard and aluminum foil, not easily cleanable, being used to cover shelving and other equipment. Observed non-food-grade buckets being used to store assorted foods. Observed deeply scored cutting boards not resurfaced or discarded as required. Plumbing system not maintained in good repair: observed hot water leaking profusely at the spigot of the hand-wash sink. Soap was not available at the hand-wash sink in the dishwashing area.
