A&J’s Twisted Kitchen, 3572 Lincoln Highway East, Kinzers, June 21. Pass. Food employees observed in Kitchen area, not wearing proper hair restraints; corrected. Raw Shell eggs stored above ready-to-eat food containers in bain-marie; corrected. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.

 

Bixler’s Lemonade Stand (Building 4), 955 N. State St., Ephrata, June 21. Fail. Temporary hand-washing station being used instead of an approved hand-washing station for a permanent license facility.

Blanks Food Shack, 135 Brethern Church Road, Leola, June 21. Pass. No violations.

El Punto Restaurant, 350 Main St., Mountville, June 21. Fail. The person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Owner and employees are not washing their hands between changing tasks. Chayote and carrots observed in the cooler, slimy to the touch, spoiled, and moldy and is adulterated. Observed employee food comingled with food for the business rather than stored segregated on the bottom of the cooling unit. Frozen pork observed thawing in the three-compartment sink full of hot water. Refrigerated, ready-to-eat, time/temperature-control-for-safety food prepared (assorted food) in the food facility and held for more than 24 hours, located in the reach-in cooler, is not being date-marked. The upper interior of the microwave is peeling severely and possibly subjecting food to physical contamination. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in the reach-in cooler. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration of quaternary ammonia. The hand-wash sink in the back was blocked by a bottle of bleach and a bottle of soap stored inside and the hand-wash sink in the middle food preparation was blocked by a large trash can and not accessible at all times for employee use; repeat violation, June 12, 2023, and Dec. 12, 2023. The hand-wash sink in the front service area and the hand-wash sink in the middle food preparation area are being used as a food preparation sinks as evidenced by observed rice and flour in the sinks; repeat violation, June 12, 2023, and Dec. 12, 2023. The linoleum floor in the middle food preparation area is torn and no longer smooth and easily cleanable; repeat violation, Dec. 12, 2023. The wall above the three-compartment sink and behind the shelving for drying equipment are peeling and chipping paint and no longer smooth and easily cleanable. The floor/wall juncture in beneath the three-compartment sink is not coved and closed to 1/32 inch. A working container of window cleaner was stored on the same shelf with single service articles in the front service area. An aerosol can of Smoke Zap Deodorizer was stored in a box along with single-service articles (drinking cups and sauce cups).

A working container of dish soap was stored next to bus tub of raw chicken and two working containers of oven cleaner were stored next to the bulk rice; corrected.

Snowfox at Weis No. 80, 1629 S. Market St., Elizabethtown, June 21. Pass. Observed a heavy accumulation of ice on sushi product and ingredients stored in main walk-in freezer.

Sunoco Centerville, 520 Centerville Road, Lancaster, June 21. Fail. Observed two half-gallon containers of reduced-fat milk beyond the sell-by date being offered for sale. Observed single-service, single-use articles (drinking cups) stored beneath the plumbing of the hand-wash sink in the customer area, a prohibited area. The food facility does not have the original certificate for the certified food employee posted in public view. The food facility does not have a hand-wash sink located in the food prep/warewashing area.

Seafood department: Observed heavy ice accumulation on the interior door and shelves of walk-in freezer. Bakery department: Observed paper towel dispenser empty at the hand-wash sink in the bakery production area; corrected.

Adamstown Community Pool, 272 Main St., Adamstown, June 20. Pass. Food employees observed in prep area, not wearing proper hair restraints, such as nets, hats, or beard covers. Food contact surface of plastic cover in bain-marie is cracked and not easily cleaned. Food facility has a certified food employee, but a certified food employee was not available during all hours of operation, as evidenced by an inability to talk with the certified food employee during this inspection.

The person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Observed two boxes of eggs held at 82 F, in the upper storage area, rather than 45 F or below as required. Sliced turkey, a refrigerated, ready-to-eat, time/temperature-control-for-safety food in the reach-in cooler, was date-marked by the facility, but was beyond the seven-day use- or sell-by date and requires discarding. Food facility has a reminder statement on the menu for foods that are/or could be served raw or undercooked to the consumer; however, does not clearly disclose which foods the reminder statement applies to. Observed a pink and black slimy residue on the deflector plate of the ice maker; repeat violation, Dec. 4, 2023. Floor in the cold-storage area, is made of wood and broken linoleum, and is not durable, smooth, nonporous, non-absorbent. Live dog observed on the premise of the food facility in the customer sitting area inside. A working container of grill cleaner was stored on the same shelf with equipment (cutting boards), in the upper food storage area.

Loose rubber door gaskets observed on the refrigeration unit. Nonfood contact surfaces identified during inspection not cleaned at a frequency to preclude accumulation of dirt and soil. Repair refrigeration unit that was observed to have excess condensation pooled on interior bottom of unit. Mops are not being hung to air-dry.

Brisas Del Caribe, 407 E. King St., Lancaster, follow-up, June 17. Fail. Dry food ingredient storage containers, in the food preparation area, are not labeled with the common name of the food. Food dispensing utensils in flour and seasoning mixtures observed stored in the food and not with handle above the top of the food and the container. Observed food products stored directly on the floor in walk-in refrigeration unit, rather than 6 inches off of the floor as required. Date and label all potentially hazardous foods in walk-in refrigeration unit. Food employee is not using available sanitizer test strips or test kit to determine sanitizer concentration. Observed food facility only had expired sanitizer. Clean and sanitize food contact surfaces throughout. Cooking utensils, a food contact surface, were observed to have food residue and were not clean to sight and touch. Trash receptacles within the food facility that are not in immediate use are not covered properly. Broken unused equipment stored in rear area outside the food facility needs removed. Door between the food preparation and serving area is damaged and in need of repair.
