Sliced tomatoes and several other food items were held in an ice bath with melted ice at 80°F, rather than 41°F or below as required. Corrected. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration for the dish machine and for the bar sink. Storm door located in the kitchen area of the food facility has a gap at the bottom and does not protect against the entry of pests. Working containers (spray bottles) in kitchen chemical area and the bar area, used for storing chemicals, cleaners taken from bulk supplies, were not marked with the common name of the chemical. Corrected.

Mertztown Great Valu Market, 953 State St., Mertztown, June 14. Pass. Food employees observed in deli and produce cutting area, not wearing proper hair restraints, such as nets, hats, or beard covers. Food contact surface of two spatulas was not smooth, easily cleanable and/or resistant to pitting, cracking or scratching. Corrected. Fan guards in the produce cooler and the meat room cooler were observed with an accumulation of dust. Non-food contact surfaces of dairy cooler not cleaned at a frequency to preclude accumulation of mold. Wall in the back deli area is made of drywall that is peeling/roughened / and is not a smooth, easily cleanable surface.

New Pied Piper Diner/restaurant, 1605 Route 100, Barto, June 14. Pass. Several raw meat products were stored above ready to eat foods in the downstairs walk-in-cooler. Refrigerated ready to eat time/temperature control for safety food, in the refrigerators, and both Walk-in-coolers was not compliant with datemarking by being labeled with a discard or use by date of no more than 7 days and requires discarding throughout the facility. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration.

Castaneda’s Mexican Restaurant, 225 E. Penn Ave., Robesonia, June 13. Pass. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Determined that there is a hole in the sanitizer feed line. Owner called the company and it will be repaired today. Facility will sanitize dishes in the 3-compartment sink until it is repaired. The magnetic knife holder near the serving window, a food contact surface, was observed to have dried food residue and was not clean to sight and touch. Corrected. The handwash sink in the kitchen area was blocked by a rag basket and was not accessible at all times for employee use. Corrected. Paper towel dispenser empty at the handwash sink in the kitchen area. Corrected.

Hollywood Casino Morgantown – Red Lotus, 6021 Morgantown Rd., Morgantown, June 13. Pass. Food dispensing utensil in bulk food bin observed stored in the food and not with handle above the top of the food and the container. Corrected. Observed a heavy build-up of grease under the cook line.

Hollywood Casino Morgantown – Sportsbar, 6021 Morgantown Rd., Morgantown, June 13. Pass. Observed an accumulation of old food debris in the drain next to the cook line. Corrected. The food facility does not have the original certificate for the certified food employee posted in public view. Corrected. The handwash sinks on the cook line and at the server prep station needs a barrier put in place on the left side of the sink to protect the food being prepared.

Observed large cracks in the top surface of one of the carts being used in the kitchen area. Cart was immediately removed from service.

Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the cold hold unit, is not being date marked. Observed several cases of single-service, single-use articles stored in dry storage area directly on the floor, and not 6 inches above the floor.

A food employee was observed touching a buffalo chicken cheese steak, a ready to eat food with bare hands. Food in the Bain Maries are being stored open with no covering. Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the refrigerators and Bain-Maries, is not being date marked. Burgers and steaks are served raw or undercooked to the customer’s request; however, a written consumer advisory (on the menu, table tent, or placard) is not provided to the consumer. Paper towel dispenser empty at the handwash sink in the prep area. Handwash sink in the bar area was not labeled as handwash sink.
