Time in lieu of temperature being used (for sushi rice) in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food (CORRECTED).

Horn Pub, 691 Yorktown Rd. Lewisberry, June 6. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. An open employee’s beverage container (screw capped variety) was observed in the food preparation area. Employee foods observed on the same shelf with and over foods intended for use or sale in the food facility. Raw shell eggs stored in the same container and in direct contact with shredded cheese. Beef steaks observed thawing at room temperature on the food preparation sink, which is not an approved thawing method. Crab dip, a refrigerated, ready to eat time temperature control for safety food in the two door refrigerator, was date-marked by the facility, but was beyond the 7 day use or sell by date and requires discarding. 2.5 lbs of dip discarded and valued by manager at $3.00. Mechanical warewashing machine is leaking. Can opener cutting blade, upper interior of microwave ovens, manual juicer, ice machine deflector plate and potato cutter, food contact surfaces, were observed to have food residue and were not clean to sight and touch. Non-food contact surfaces such as interior of ovens, interior of fryer cabinets, sides, sauce squeeze bottles, exterior of cooking equipment not cleaned at a frequency to preclude accumulation of dirt and soil. Soap was not available at the handwash sink in the food preparation room. Floor under equipment on cooks line area is extremely dirty, greasy, dusty, and in need of cleaning. Working containers of cleaner and sanitizer were stored above or on the same shelf with food, equipment, and/or single service articles in the food preparation room.

Hood filters and walls are greasy and are collecting dust and are in need of cleaning. Facility has replacement hoods that they will be installing.

Observed flooring underneath fryers having an large accumulation of solidified grease, dirt, trash and old food debris at the time of inspection.

Comfort Inn & Suites, 2250 N. George St. York, June 5. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions related to hand washing and warewashing. Food Employee observed using her phone with gloves on and then start food preparation tasks without a handwash in between. Consumer self service ready to eat apples display is not provided with suitable utensils or dispensing method to prevent contamination. Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods (shredded cheese) without written procedures or documentation to verify disposition of food. Ambient air measuring devices for ensuring proper food storage are not available in double door refrigerator and customer self serve counter top refrigerator. Food facility does have a three-compartment sink for manual warewashing but is using one compartment as a hand washing sink. Food Facility is using a two compartments of a three compartment sink for warewashing but is not limited to batch operations for cleaning. Cleaning agents/sanitizers used to clean/sanitize equipment and utensils are available but not being used. The wash solution temperature in the mechanical warewash equipment sanitizing with chemicals was 100°F, rather than not less then 120°F, as required. Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Mechanical warewashing equipment had a limestone buildup observed inside. Detergent bulk container supplying detergent to the wash compartment of the mechanical warewashing equipment was not hooked up to the machine. Dishes and utensils observed in the compartment of the three basin sink being used for handwashing, indicating uses other than handwashing. Non-sewage liquid (HVAC condensate/drainage) pipe is draining into the three compartment ware washing sink and is not being properly drained and disposed according to regulations. Working containers in self serve coffee area, used for storing chemicals taken from bulk supplies, were not marked with the common name of the chemical. A working container of either cleaner or sanitizer was stored above or on the same shelf with single service articles in the customer self serve coffee area.

Food employees observed in cooks line area, not wearing proper hair restraints, such as nets or hats. Corrected. Cooked chicken food was held at 114-118°F, in the grill area, rather than 135°F or above as required. Corrected – food reheated to 165°F and placed in the hot hold. Torn rubber door gaskets observed on the under counter cooling unit located in the customer service area. Observed cooking equipment casters in the cooks line area, with encrusted grease and soil accumulation. Observed interior of fryer with an accumulation of filth and food debris. Non-food contact surfaces such as sides, front and handle on the stove not cleaned at a frequency to preclude accumulation of dirt and soil. Storage shelving in customer service area observed to have accumulation of dust and food debris. Floor drains observed to have excessive filth, food debris and dirt. Corrected. Floor in the register area of the food facility is extremely dirty, dusty, and in need of cleaning. Corrected.

Ceiling vent grates over the cooks line are extremely dusty and in need of cleaning.

Food employees observed in kitchen and kitchen prep areas, not wearing proper hair restraints, such as nets, hats, or beard covers. Raw chicken was stored on top of raw beef, in the two-door cooling unit. (Discussed with all employee’s proper storage of raw animal foods; CORRECTED). Observed deflectors plate of ice machine to have brownish black residue a food contact surface and was not clean to sight and touch (CORRECTED). Observed French fry cutter blades a food contact surface, was observed to have dried black food residue and was not clean to sight and touch (CORRECTED). Observed non treated wood inside archway and located beside the main grill to be raw wood, which is not an approved material as it is not is not durable, smooth, non-porous, or non-absorbent. Floor in throughout area kitchen and prep rooms is made of vinyl and is cracked/roughened and is not a smooth, easily cleanable surface (In some areas untreated raw wood can be observed; Discussed options).

Observed in-use knives and /or cleavers stored between table edges or between tables, an area not easily cleanable & sanitized. Corrected. Observed wet wiping cloths in server side of cooks line area, not being stored in sanitizer solution. Corrected. Meat logs observed thawing at room temperature on the food preparation sink, which is not an approved thawing method. Corrected. Sliced custard pies and cheesecake food was held at 48°F, in the dessert display case, rather than 41°F or below as required. Corrected – 15 slices discarded and valued by manager at $45. Ambient air temperature measuring device for ensuring proper food storage in dessert display equipment, is not accurate to +/- 3°F. External digital thermometer displayed 38°F, interior of case was 48°F. An insect control device located in dish machine and ice machine areas with potential to contaminate food, equipment, and / or utensils.

Food Facility Person in Charge not able to produce records showing that raw or partially cooked ready to eat fish has been frozen by the facility or approved supplier as required, before use or sale. Corrected – suppliers contacted and letters of destruction emailed.

Frey Daddy’s Pizza and More, 2899 Whiteford Rd. York, June 3. Pass. Foods in the display area are uncovered and subject to contamination from dust on a fan that is on and blowing in the display area. Refrigerated ready to eat, time/temperature control for safety food (baked ziti, meatballs, marinara sauce) prepared in the food facility and held for more than 24 hours, located in the walk in cooler, is not being date marked. Corrected. Loose or broken door hinges observed on cupboard under the handsink located in the customer service area. The interior floor surface of the handsink cupboard is broken and deteriorating and is in need of repair/replace. Underside of mixer motor house, a food contact surface, was observed to have food residue and was not clean to sight and touch. Corrected. Observed wire shelving equipment, inside the walk in cooler and in the cooks line area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Plumbing system not maintained in good repair – observed customer service area hand sink leaking at the faucet.

Wyndham Garden, 2000 Loucks Rd. York, June 3. Pass. Lemonade and tea observed stored in non Food Grade buckets (Lowes buckets). Facility will get food grade buckets. Catering food lids in the paper good dry storage area are facing upward instead of inverted to protect from dust, dirt, debris or any other type of contamination. Observed soups (Chili, O Soup) in the walk-in bakery cooler stored with no covering. Plastic footer of slicer observed damaged cracked and with worn off teeth. This is no longer smooth and easily cleanable and needs to be replaced. Counter (black fans) are dusty and dirty and in need of cleaning. Faucet at the two-compartment sink in the warewash area has constant leak even when water is turned off. Wall outside of the glass storage room on either side of the door is damaged with holes and in need of repair. Missing or low floor grout and broken cracked tile in the dishwashing area. Small fly activity in them mop sink area and a2-3 throughout different areas of the kitchen. Facility does have pest control. Mops are not being hung to air dry.
