Bonkey’s, 28 E. Franklin St. New Freedom, June 1. Pass. Blades and interior walls of ice shaving machine, a food contact surface, was observed to have black residue and was not clean to sight and touch. Corrected.

Gunpowder Falls Brewing, 224 N. Constitution Ave. Space 5, New Freedom, June 1. Pass. In use tongs being stored on the door of the stove in a way that allows for potential contamination from employees. Corrected. Sumari flakes observed thawing in standing water on prep counter, which is not an approved thawing method. Corrected. Facility placed product under cold running water to finish thawing. 6 baked potatoes were held at 58°F, outside of refrigeration on top of the oven, rather than 41°F or below as required. Corrected. Facility discarded. Refrigerated ready to eat, time/temperature control for safety food; cooked chicken wings, sliced corn beef, dressings, cooked ground beef, sauces and other foods prepared in the food facility and held for more than 24 hours, located in the reach in refrigerator, is not being date marked. Corrected. Corn salsa, strawberry topping, and other refrigerated, ready to eat time temperature control for safety foods in the reach in refrigerator, was date-marked by the facility, but was beyond the 7 day use or sell by date and requires discarding. Corrected. Ice machine in bar area, a food contact surface, was observed to have black mold-like residue and was not clean to sight and touch. Corrected. Working containers, used for storing cleaners taken from bulk supplies, were not marked with the common name of the chemical. Corrected.

Mason Dixon Shaved Ice, 18166 S. Susquehannan Trail, New Freedom, June 1. Pass. Observed wet wiping cloths used for cleaning milkshake machine, not being stored in sanitizer solution. Corrected. Observed no chemical sanitizer being used on equipment and utensils after rinsing them, and prior to use. Corrected. Facility will make up sanitizer water buckets for wiping down equipment between uses. Employees were using 2 bay warewashing sink as the designated hand washing sink but a hand sink was available. Corrected. Moved signage from 2 bay sink and employees will use this hand sink for handwashing. Soap was not available at the handwash sink. Corrected.

Seven Sports Bar & Grille, 14 E. Franklin St. New Freedom, June 1. Pass. Observed many foods stored uncovered and unprotected in walk-in cooler which is subject to potential contamination. Refrigerated ready to eat, time/temperature control for safety food; cooked beef, dressings, chili, coleslaw, chicken wings prepared in the food facility and held for more than 24 hours, located in the walk-in cooler, is not being date marked. Corrected. Food slicer, a food contact surface, was observed to have dried on food residue and was not clean to sight and touch. Corrected. Working containers in the bar area, used for storing chemicals and cleaners taken from bulk supplies, were not marked with the common name of the chemical. Corrected.

Culhane’s Steak House, 1 Laurel Rd. New Cumberland, May 30. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed raw eggs stored directly over ready-to-eat tomato ketchup, cake and dressings in the walk-in cooler. Numerous food ingredient storage bottles, on the cook line area, observed not labeled with the common name of the food. Observed wet wiping cloths at the wait salad area and a prep table next to the cook line area, not being stored in sanitizer solution. Observed numerous food items (commercially processed and food prepared in the food facility including, but not limited to beats, broth, noodle soup, cut vegetables, sauces, etc.) in the walk-in cooler, and being held for more than 24 hours, is not date marked with the date it was opened or made. Observed the following on food contact surfaces: A white bin stored on a shelf in the dry storage area with spoons, funnels, spatulas, scoops, etc. and dried food debris on the interior, contaminating equipment stored; A small white tub with bottles and shaker stored on a shelf in the driy storage area, with food debris on the interior of the tub, coming in contact with the equipment stored; A white plastic bin stored on a shelf near the slicer/grinder, with knives, grater, meat tenderizer, etc. stored inside, coming in contact with dried food debris. Two black dirty table cloths and a jacket coming in contact (covering/stored on top of) with the clean slicer and meat chopper. White bucket on shelf above salad station with tongs, scoops, pie servers stored inside with dried food debris contaminating equipment stored. Electric meat saw, stored in back storage area, with dried accumulation of food debris on the housing and blade and not clean to sight or touch. Rotary slicer stored on a shelf in the back area, near the beer cooler, with dried food debris on the blades and housing and not clean to sight or touch. Tongs and pot lids, stored in the bottom drawer on the cook line prep table with accumulation of food debris coming in contact with equipment stored on the cook line. Seafood forks stored in an orange plastic cup with heavy food debris in the bottom, coming in contact with forks stored. Plastic cup with steak knives stored with accumulation of food debris coming in contact with the knives, stored on the cook line. Cutting board at the bar area with food debris on the cutting surface and not clean to sight or touch. Whole orange stored on a dirty tray on the inside of the three door beer cooler, at the bar area, contaminting the orange stored. A pink/brown slimy mold-like substance build-up observed on the interior of the soda gun holster at the bar area. Observed no cleaning log for the meat grinder in the back prep area. Observed clean dish racks stored on the floor in the dry storage area near the dish machine. Screen door located in the rear cook line area of the food facility has a gap around the entire perimeter and does not protect against the entry of insects, rodents, and other animals. Observed ceiling in the cook area, has a hole, or is broken and in need of repair. Observed peeling paint on the ceiling above the cook line and dish-washing areas. Observed numerous floor tiles cracked, split, missing, and being held together with silver tape, which is not a cleanable surface. Tiles need repaired or replaced.

Paradise Lutheran Church, 3241 Church Rd. Thomasville, May 30. Pass. No violations.

Stone Grille & Taphouse, 204 St Charles Way, Suite G, York, May 30. Pass. Food employees observed in cooks line area, not wearing proper hair restraints, such as beard covers. Crab dip and Pork BBQ foods, which was cooled, was only reheated to 115°F for hot holding and not 165°F for 15 seconds as required. Corrected; provided training. Plastic chill box used for cold holding garnish/lemon is broken and no longer cleanable as required. Bain marie unit door gaskets are loose and torn. Observed accumulation of frozen condensate on freezer box ceiling and condenser unit. Underside of mixer motor house and can opener cutting blade, food contact surfaces, were observed to have food residue and were not clean to sight and touch. Corrected. Observed bottled beer cooler equipment, in bar area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Observed walk in cooler and beer keg cooler floors with an accumulation of dust, dirt, food residue and debris. Floor in the bar area is damaged – hole in flooring near the beer cooler should be repaired.

American Legion Post #799, 2590 Willow St. York, May 29. Pass. Refrigerated ready to eat, time/temperature control for safety food (ham and bean soup) prepared in the food facility and held for more than 24 hours, located in the double door refrigerator is not being date marked. Corrected. Cleaned and sanitized utensils located in kitchen area, are stored with food contact surfaces/food or lip area exposed to hand contact when retrieved by food employees. Food facility inspection indicates evidence of rodents/insect activity in handwashing/three basin sink area. Observed one live adult roach-like insect in the handsink basin. Facility does have a PCO.

Domino’s Pizza, 546 Main St. Shrewsbury, May 29. Pass. Food facility does not employ a certified food employee as required.

The First Post, 3691 E. Market St. York, May 29. Pass. Blue Cheese dressing, a refrigerated, ready to eat time temperature control for safety food in the salad preparation area, was date-marked by the facility, but was beyond the 7 day use or sell by date and requires discarding. Corrected; discarded. Upstairs and downstairs bar area gun style soda dispensers, food contact surfaces, were observed to have food residue and were not clean to sight and touch. Corrected. Non-food contact surfaces of server area fountain soda machine not cleaned at a frequency to preclude accumulation of dirt and soil.

Mason Dixon Family Restaurant, 3 Old Farm Ln. Shrewsbury, May 29. Pass. Observed wet wiping cloths not being stored in sanitizer solution. Refrigerated ready to eat, time/temperature control for safety food – Fish, cooked meats, dressings and sauces, macaroni salad and other foods, prepared in the food facility and held for more than 24 hours, located in the walk-in cooler, is not being date marked. Corrected. Observed many food pans with old label residue on food contact surface area. Corrected. Cleaned and sanitized utensils located in drink/ice cream area, are stored with food contact surfaces/lip area exposed to hand contact when retrieved by food employees. Corrected. The handwash sink in the cooks area being used as a food preparation sink as evidenced by observed canned potatoes in the sink. Corrected. Facility will use the utility sink located next to the handsink for draining canned foods and will place a barrier between the sinks. Screen door located in the back exit area of the food facility has an open tear and does not protect against the entry of insects, rodents, and other animals. Facility will repair the screen.

Primanti Brothers – Hanover, 100 Eisenhower Dr. Suite 300, Hanover, May 29. Pass. Hood system is not adequate to remove heat and/or grease, as evidenced by condensate and/or grease collecting on the walls, ceilings, and fixtures. Observed clean food equipment and/or utensils in ware wash area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).

Blue Koi, 805 Baltimore St. Hanover, May 28. Pass. Observed various food stored directly on the floor in area, rather than 6 inches off of the floor as required. (CORRECTED). Can opener blade a food contact surface, was observed to have food residue and was not clean to sight and touch. (CORRECTED). Screen door was observed to have gaps at top and along the side and does not protect against the entry of insects, rodents, and other animals.

Cvs Pharmacy #7275, 723 Lombard Ave. Red Lion, May 28. Pass. No violations.

Ginmiya Asian Restaurant, 2524 Eastern Blvd. York, Change of Owner, May 28. Pass. Food utensils in rice cooker area observed stored in a container of water which is not maintained at 135°F. Observed wet wiping cloths in sushi area, not being stored in sanitizer solution. Raw poultry boxes are being lined and reused to store par cooked breaded meats inside the walk-in cooler. Corrected. Food Facility Person in Charge not able to produce records showing that raw or partially cooked ready to eat fish has been frozen by the facility or approved supplier as required, before use or sale. Sponges observed in the three basin sink area being used to clean food contact surfaces. Plastic utensils used for cooking are damaged and are not durable under normal use in the food facility. The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 50-100 ppm as required. Corrected. Mechanical warewashing equipment had a lime buildup observed inside. Food facility is reusing plastic gloves, which is intended to be a single-service or single-use article. Corrected – provided training. The following food contact surfaces were observed to have food residue and were not clean to sight and touch: Soda machine dispensing nozzles; Can opener cutting blade; Ice machine deflector plate. Corrected; all items were washed/rinsed/sanitized. Ceiling tiles missing in the cooks line area, and need replaced.

Joe’s Kwik Marts (#1038), 710 Limekiln Rd. New Cumberland, May 28. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed employee food stored directly on top of consumer foods in the walk-in cooler, instead of a designated “employee only” area. Observed two Swiss 2% pint containers with sell by dates of 05/21 and 05/24. Observed two pint Swiss pint containers of whole milk with a sell by date of 05/24. Observed two Swiss quart containers of whole milk with a sell by date of 05/23. Observed a box of sugar and a box of coffee stored directly on the floor in back dry stock area, rather than 6 inches off of the floor as required. Observed the following on non-food contact surfaces, with the possibility to contaminate food dispensed: Underside of cappucino dispenser with heavy accumulation of dried food; Uderside of fresh brewed iced coffee dispenser with heavy accumulation of dried food; Underside of 1/2-1/2 and whole milk dispenser with accumulation of dried food; Underside of coffee dispenser with accumulation of dried food. Observed the hand-wash sink in the back area with a green scrubby inside, indicating uses other than hand-washing. No sign or poster posted at the handwash sink in the back area to remind food employees to wash their hands. Mops are not being hung to air dry and were left overnight in a bucket of dirty mop water.

Royal Farms #118, 101 Carlisle St. Hanover, May 28. Pass. Food employee observed in fryer area, not wearing proper hair restraints, such as nets, hats, or beard covers. Observed several boxes of frozen food stored directly on the floor in the freezer area, rather than 6 inches off of the floor as required. (CORRECTED). Observed food contact surface of self-service beverage machine to have food debris and blackish brown mold like residue and was not clean to sight and touch. (CORRECTED). Floors in in back room as well as in the restaurant area of facility were observed to be dirty, dusty, and in need of cleaning.

Pass. one half bag of shredded cheddar cheese was held outside of refrigerator on a food preparation table and had a temperature of 53°F, rather than 41°F or below as required. Corrected. Facility discarded. Hood system is not adequate to remove heat and/or grease, as evidenced by condensate and/or grease collecting on the walls, ceilings, and fixtures. Observed clean food equipment and/or utensils, stored wet in a manner that does not allow for draining and/or air drying (wet nesting).
