Mold-like substance on walls of sink, dish machine: Dauphin County restaurant inspections, May 1, 2024

Pizza Hut, 675 Main St. Hummelstown, Follow-up, April 18. Fail. Observed dish racks for running dishes through the dish-machine with a build-up of food residue and in need of cleaning or replacement. Observed the following on non-food contact surfaces: Black mold-like substance on all of the walls around the three bay sink and dish machine and is in need of cleaning. Dish machine with food accumulation on the exterior front and sides with the possibility to contaminate dishes being cleaned inside. Exteriors of all cooling, freezing and warming units handles and are in need of cleaning. Ticket/order machine with dried food build-up which could cause cross contamination even on a gloved hand when reaching for order tickets. Interior doors of the Randell baine marie with a black mold-like substance on the gaskets, door and inside unit at doors. An accumulation of static dust on the ceiling light fixtures and hood vent over the dish machine.

Observed food debris on bottom shelf of 2-door refrigerator next to the service area. Shelves and especially bottom shelf need to be kept clean to prevent cross contamination.

Hong Kong Ruby, 2308 Patton Rd. Suite E, Harrisburg, April 16. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food Employee observed changing tasks that may have contaminated hands without a proper handwash in-between. Food Employee observed eating or tasting food in the prep-table area. Food Facility Person in Charge not able to provide documentation that meats are from an approved source. All food ingredient storage containers, in the food facility, is not labeled with the common name of the food. Observed salmon, shrimps and tuna… was held at 51°F, in the sushi area, rather than 41°F or below as required. Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the all facility, is not being date marked. Sponges observed in the three bay sink area being used to clean food contact surfaces. Corrected. Metal shelves in the walk in cooler have rust and residue accumulations. Observed numerous plastic bins of various sizes, and lids, cracked, chipped, broken and discolored and should be discarded. Observed deeply scored cutting boards not resurfaced or discarded as required. Observed the following on food contact surfaces: Can opener stored dirty; Accumulation of grease and dust on the range hood, which is dripping on the cooking area below and contaminating food being prepared. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. The exteriors of multiple food containers with accumulation of dried food debris on the exteriors and is in need of cleaning. The handwash sink in the Sushi area being used as a food preparation sink as evidenced by observed washing food utensils in the sink. Food facility did not submit a HACCP plan for approval by the Department as required for the Sushi area.

The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed carton of raw eggs stored directly on top of deli meats/cheese in bain-marie unit in cooking area. Corrected on site. Commercially processed refrigerated, ready to eat, time/temperature control for safety food (meats and cheeses), and refrigerated ready to eat, time/temperature control for safety food prepared in the food facility, located in the walk-in cooler and bain-marie unit in cooking area held more than 24 hours, is not being marked with the date it was opened/prepared. Corrected on site. Observed multiple deeply scored cutting boards not resurfaced or discarded as required. Observed the following on food-contact surfaces not being cleaned on a frequent basis: Manual can opener in cooking area with accumulation of old food residue, corrected on site; Plastic drawers storing cooking utensils on storage rack across from three compartment sink with accumulation of old food debris/crumbs; Plastic lid dispensers for self-serve soda machines with accumulation of old, sticky food residue; Nozzles for creamer, milkshake, and coffee dispensers with accumulation of old, sticky food residue. Observed single-service, single-use articles in the back storage area stored directly on the floor, and not 6 inches above the floor. Corrected on site. Double doors located in the front entrance of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals.
