Biaggio’s, 1021 E. Cumberland St. Lebanon, April 19. Pass. No violations.

Cakes by Maraima & Café, 443 Cumberland St. Lebanon, April 19. Pass. Observed a very small amount of debris in some crevices in the top of the microwave. Observed some peeling paint on one door of a storage cabinet.

Cleona Coffee Roasters, 700 W. Main St. Annville, April 19. Pass. No violations.

Pa Chen’s House, 1510 Cumberland St. Lebanon, April 19. Pass. Raw chicken was stored above raw pork in the walk-in cooler. Corrected. Observed one bus tub of raw pork and one bus tub of raw chicken stored directly on the floor under a prep table, rather than 6 inches off of the floor as required. When the person in charge retrieved one of the bus tubs of raw meat from the floor, he sat it on a cutting board that was being used for raw chicken. Cleaned the cutting board. One metal strainer on the clean equipment shelf and two containers of food utensils, food contact surfaces, were observed to have food residue and was not clean to sight and touch. Items were cleaned. A cardboard box of plastic wrap was very soiled and was wet with raw chicken liquid from prep work taking place in the same area. Discarded box of plastic wrap. The handle of the walk-in cooler, a non-food contact surface is not cleaned at a frequency to preclude accumulation of dirt and soil.

The Chubby Unicorn (plate #Xmu6053), mobile food facility Type T, 707 E. Broad St. Palmyra, April 18. Pass. No violations.

New Lin Garden One Inc., 106 Palmyra Commons, Palmyra, Change of Owner, April 18. Pass. Food Employee observed eating or tasting food in the food preparation area. Non-food contact surfaces (hood filters) not cleaned at a frequency to preclude accumulation of grease.

Laudermilch Meats, 724 W. Main St. Annville, April 17. Pass. Observed containers of food stored directly on the floor in the walk-in freezer, rather than 6 inches off of the floor as required. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in a refrigerator in the front food preparation area. Observed deeply scored cutting boards not resurfaced or discarded as required.

The Pretzel Hut, 2224 Furnace Hill Pike, Newmanstown, Change of Owner, April 17. Pass. No violations.

Rotunda Restaurant & Brewery, 245 W. Main St. Annville, April 17. Pass. Food employees observed in the kitchen, not wearing proper hair restraints, such as nets, hats, or beard covers. Thermometers for ensuring proper temperatures of food are not available or readily accessible. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. The interior of the ice machine, a food contact surface, was observed to have mold and was not clean to sight and touch.

China Wok, 811 Bowman St. Lebanon, April 16. Pass. Cardboard cartons are being used for small food items such as packs of condiments; the cardboard is soiled because of refilling the same cartons. Durable containers made of plastic or metal that can be properly cleaned as needed should be used instead of cardboard cartons. The handwash sink in the prep area was blocked by a lid of a food container that was sitting in the sink. The light intensity in the food preparation area and food storage area is not adequate; several lights are not functioning.

Dominican Grocery Store, 200 Lehman St. Lebanon, Follow-up, April 16. Pass. All food items in the steam table were at 135°F or above as required, except for two items that were sitting in an extra pan and not properly down into the hot zone of the steam table. The two items were removed and the problem was reviewed with the person in charge. The shelf below the steam table and the floor behind a prep table in the side storage room, both non-food contact surfaces are not cleaned at a frequency to preclude accumulation of dirt and soil. There is a small amount of trash on the ground behind the facility in the refuse storage area. The glass inside the door of the ice freezer on the front exterior of the property is cracked.

Dutch-way #3, 2495 Stiegel Pike, Schaefferstown, Complaint, April 16. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Exposed food preparation observed in grill area under dirty ventilation ducts, and subject to potential contamination. Gallon of hot gravy in plastic container was not being cooled in a manner that would allow it to go from 135°F to 70°F in 2 hours and/or from 135°F to 41°F within 6 hours, after preparation. PRIOR VIOLATION 08/08/2023. Three bay sink in restaurant observed with build up of food residue and not cleaned before use, and frequently throughout the day. Assorted food containers on drying shelf in restaurant observed to have food residue and were not clean to sight and touch. Removed for cleaning. Wire racks used to fry donuts are not cleaned at a frequency to prevent material being transferred to products. Observed clean food equipment and/or utensils in dish area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). Removed for cleaning. Accumulation of grease, litter, and debris under equipment in restaurant kitchen.

Rita’s Italian Ice #223, 640 E. Penn Ave. Cleona, April 16. Pass. No violations.

One Stop Corner, LLC – Cumberland Street, 908 Cumberland St. Lebanon, Opening, April 15. Pass. No violations.

Shay’s, 35 S. 8th St. Lebanon, April 14. Pass. Observed wet wiping cloths not being stored in sanitizer solution. Clean food equipment is on a painted shelf. The employee was not aware of test strips to check sanitizer concentration. No trash can by the handwashing sink and towels were not on the dispenser. One electrical outlet is missing the cover. One spray bottle was not labeled.
