Days Inn Grantville, 252 Bow Creek Rd. Grantville, Follow-up, April 12. Pass. No violations.

Sawasdee Thai Cuisine, 1319 E. Chocolate Ave. Hershey, April 12. Pass. Observed raw eggs in bain-marie unit in the cooking area coming in contact with ready to eat foods with possibility of cross-contamination. Corrected on site. Observed food utensil in kitchen area stored in a container of water which is not maintained at 135°F. Observed wet wiping cloths in the kitchen area, not being stored in sanitizer solution. Corrected on site. Observed the following on food contact surfaces: Bottles containing food ingredients in the cooking area with accumulation of old food residue and are not being cleaned at a frequency, corrected on site; Containers storing cooking utensils in the cooking area with accumulation of old food debris and are not being cleaned at a frequency, corrected on site. Observed cooking equipment in the kitchen area with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Observed the following on non-food contact surfaces: Underside of soda dispenser with accumulation of old sticky food residue, corrected on site; Mechanical dishwasher with accumulation of food debris around outer edges and is in need of cleaning; Ice accumulation around condenser and food stored on racks below in walk-in freezer. Shelving storing plates/bowls/single-use containers in cooking area of the food facility is dirty, dusty, and in need of cleaning.

Hardee’s #1383167, 724 Alleghany Ave. Dauphin, April 10. Pass. Observed three containers storing plastic lids, a food contact surface, with accumulation of old food debris/crumbs and are not being cleaned at a frequency. Corrected on site. Observed equipment in the cooking area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Observed the following on non-food contact surfaces: Door gaskets for freezer unit storing beef patties with accumulation of food debris and is in need of cleaning; Floors, walls, shelves throughout the cooking and food prep areas with accumulation of dust, dirt and food debris and are in need of cleaning; Soda dispensers in employee service and self-service areas with accumulation of old, sticky, food residue and are in need of more frequent cleaning. Corrected on site.

Italian Delight, 490 Bow Creek Rd. Grantville, April 10. Pass. Manual can opener blade, a food contact surface, was observed to have old food residue and was not clean to sight and touch. Corrected on site. Observed cardboard, which is not an easily cleanable surface, being utilized as coverings for shelves in the walk-in cooler and dough making area.

Khana Indian Bistro, 709 Fishburn Rd. Hershey, April 9. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed multiple trays of food items stored open with no covering in the walk-in cooler. Observed raw eggs stored on shelf in walk-in cooler above ready to eat foods with potential for cross contamination. Observed several food ingredient storage containers/bottles in the cooking and prep areas not labeled with the common name of the food. Observed single-use containers without handles stored in bus tubs of salt, sugar, and spices. Observed two ladles stored in a container of water next to the stove which is not maintained at 135°F. Loose/deteriorated rubber door gaskets observed on walk-in cooler and is in need of replacement. Observed multiple deeply scored cutting boards not resurfaced or discarded as required. Observed the following on food contact surfaces: In-use cutting boards on both bain-marie units dirty/discolored and appeared to not have been cleaned for quite some time; Blender stored on racks near bain-marie unit in cooking area with accumulation of old food residue and is not being cleaned at a frequency; Multiple skewers used for cooking unit with accumulation of food debris stored hanging with clean skewers and are not being cleaned at a frequency; Food ingredient bottles/containers in cooking area have accumulation of old, dried food residue and are not being cleaned/replaced a frequency; Stainless steel/plastic food storage containers stored on racks in the cooking area and above three compartment sink were slimy/sticky to the touch and are not being cleaned thoroughly; Containers, buckets, bus tubs (including lids) storing food items throughout the facility were not clean to sight and touch, have accumulation of old food debris, and are not being replaced/cleaned frequently; 3 knives stored dirty on dirty magnetic knife holder above prep table in cooking area, each were not clean to sight and touch; Box grater and meat cleaver stored dirty hanging from screws protruding from wall above prep table in cooking area which is not a clean surface; Potato peeler with heavy accumulation of old food debris stored hanging from edge of storage rack above prep table in cooking area and not cleaned from previous use, corrected on site; Underside of door handles for refrigeration units throughout the facility with accumulation of old, dried food residue and are in need of more frequent cleaning; Manual can opener blade with heavy accumulation of old food residue and is not cleaned at a frequency, corrected on site; Rice cooker not being used with accumulation of old grains of rice inside and was not cleaned from that last time it was used; Several table pans for buffet stored dirty on buffet table and are not being cleaned frequently. Observed cooking and refrigeration equipment throughout the kitchen area with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Observed the following on non-food contact surfaces: Static dust accumulation on ceilings throughout the kitchen area; Accumulation of grease dripping from piping above cooking equipment with possibility to contaminate food cooking below; Shelves and racks throughout the kitchen area, freezers and in walk-in cooler have accumulation of dust, dirt, old food debris/crumbs with possibility to contaminate food/equipment stored on them and are in need of more frequent cleaning; Exterior surfaces of mechanical dishwasher with build-up of old, dried food residue; Accumulation of static dust around light fixtures on ceiling above freezers. Observed single-service, single-use to-go containers stored on rack in prep area which were not in the original protective package or inverted to prevent contamination. Observed food storage containers on racks in the cooking area and above three compartment sink stored wet in a manner that does not allow for draining and/or air drying (wet nesting). Observed floor tile underneath fryer cracked/roughened and is not a smooth, easily cleanable surface. Observed ceiling tile broken in room above freezers and replaced with cardboard and is in need of proper repair or replacement. The entire food facility is extremely dirty, dusty, and in need of cleaning. All floors, walls, and equipment are in need of deep cleaning.

Comfort Inn Hershey, 1200 Mae St. Hummelstown, April 8. Pass. Food Employee observed changing tasks that may have contaminated hands without a proper handwash in-between. Educated and corrected on sight. Observed wet wiping cloths on the prep table next to the microwave oven area, not being stored in sanitizer solution. Commercially processed sausage was left in the microwave and could not be used for service because it only temped at 100°F. Discarded, educated and corrected on site. Observed all metal racks in the American Panel walk-in cooler with accumulation of dried food debris and in need of cleaning. Observed the underside of the multi-juice dispenser on the customer self-serve line with accumulation of dried juices and not clean to sight or touch. Unwrapped and unprotected single use straws stored in the customer area. Corrected on sight and replaced with inverted spoons in a round cylinder. Wall in the kitchen area, has a hole, or is broken and in need of repair behind the microwave ovens. Observed one ceiling tile broken in the kitchen area, and in need of replacement.
