Warrior Kitchen @ Southern York Co. School District, 3280 Fissels Church Rd. Glen Rock, Opening, March 7. Pass. The water temperature of the wash compartment of the manual warewashing equipment was 95.6°F, rather than not less than 110°F, as required.

Country View Farm Market, 2680 Delta Rd. Brogue, March 6. Pass. Observed cream soup and chicken broth being cooled at room temperature. Employees were unaware of correct cooling technique of from 135°F to 70°F in 2 hours and/or from 135°F to 41°F within 6 hours, after preparation. Corrected. Foods were within the first 2 hours of cooling so they were placed into refrigerator to finish cooling. Staff was educated on proper cooling procedures. Observed both slicers in the deli area not being cleaned at a frequency to control bacteria growth. Corrected. Slicers were cleaned and a cleaning log will be created and followed.

Olive Garden #1885, 10 Wilson Dr. Hanover, March 6. Pass. Food employee observed in wearing bracelet/watch/ring on hands or arms. (CORRECTED). Food facility hot water heater is not producing enough hot water to supply two of the hand washing sinks located in main kitchen at the time of this inspection. Observed ceiling vents located in kitchen to have accumulation of static dust and dirt cleaned, or filters changed as it is emitting dust and dirt into the air.

Commercially processed refrigerated, ready to eat, time/temperature control for safety (hot dogs and sausages), located in the walk-in milk and tea cooler, and held more than 24 hours, is not being marked with the date it was opened. Corrected. Fan guards in the walk-in milk and tea cooler with accumulation of dust and in need of cleaning.

Deteriorated label observed inside the wash basin of the three basin sink precluding proper cleaning. Non-food contact surfaces of the fountain soda machine are not cleaned at a frequency to preclude accumulation of dirt and soil.

Yummy Yummy Restaurant, 194 Memory Ln. York, March 5. Pass. Observed in-use cleaver stored between table edges or between tables, an area not easily cleanable & sanitized. Corrected. Three basin sink does not have adequate number drain stoppers/plugs to properly set up basins for warewashing. Provided training. Manual warewashing equipment observed with build up of filth and not cleaned before use. Cleaned and sanitized utensils located in food preparation area, are stored with food contact surfaces / food or lip area exposed to hand contact when retrieved by food employees.

The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed unauthorized persons in kitchen area. The Person in Charge failed to control access to food facility by unauthorized persons. An open employee’s beverage container was observed inside the sandwich make table, a food preparation area. Corrected. Vape smoker found on the slicer in the kitchen area during the inspection. Cooked sausage, hamburger, cheeses, cut vegetable foods were held at 50-59°F, inside the pizza bain marie cooling unit, rather than 41°F or below as required. 25 lbs of product was voluntarily discarded and valued by manager at $125. Corrected. Refrigerated ready to eat, time/temperature control for safety food (cooked chicken, pizza sauce, tuna salad etc. ) prepared in the food facility and held for more than 24 hours, located in the walk in cooler and bain marie units, is not being date marked. Provided training. Provided training. Thermometers for ensuring proper temperatures of food are not available or readily accessible. Observed children’s reading books on floor and counter in the kitchen area.

Parma Pizza and Grill, 220 Maple St. Manchester, March 4. Pass. Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods (Pizza and stromboli) without written procedures or documentation to verify disposition of food. Provided training. Underside of mixer motor house and can opener cutting blade, food contact surfaces, were observed to have food residue and were not clean to sight and touch. Corrected. Food facility is using flex pipe to repair the the waste water line at the handsink, which is not an approved material. The floor/wall juncture in three basin sink area is not coved and closed to 1/32 inch. Duct tape is being used to close the gap where two flooring materials meet in the door threshold between customer service and kitchen areas. Rear kitchen door to the outside, is being propped open. Corrected.
