Observed the gasket on the freezer door on the prep line being held in place by a piece of duct tape, which is not a readily cleanable surface. Observed a buildup of dirt and grease on the top edge of the freezer doors on the prep line. Observed a buildup of dirt on the soda dispenser holder in the banquet room.

Holiday Inn Harrisburg/Hershey, 604 Station Rd. Grantville, March 4. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed some, not all food ingredient storage containers/bottles/shakers, in the kitchen area, is not labeled with the common name of the food. Observed two pitchers of food utensils (spoons and steak knives) stored in containers of water which is not maintained at 135°F. Food dispensing utensil, a single serve black souffle cup, stored in a container of crumbled bacon observed stored in the food. Observed utensils (tongs, spoons, spatulas, ladels, etc.) stored at a height which makes them not accesible to not touching the food contact end of the utensils, causing contamination. No date marking on some, not all, and incorrect dates (02/31 only 29 days in February) on some commercially processed refrigerated, ready to eat, time/temperature control for food safety, located in the Victory up cooler and the large walk-in cooler, and held more than 24 hours, is not being marked with the date it was opened. Mechanical warewashing equipment does not have a manufacturer data plate with operation specifications. Loose/deteriorated rubber door gaskets observed on the Victory two door upright cooling unit in the kitchen area. Observed puddling water in the bottom of the True two door baine marie on the cook line. Observed deeply scored cutting boards not resurfaced or discarded as required, in the broken walk-in cooler being used for storage. Observed a pan of grill presses located at the griddle area, are not in good repair or condition. Handles are missing on all of the grill presses. Observed black tape on the handle of a rolling cart, holding handle together. Tape is not a cleanable surface and cart handle is in need of repair or replacement. Observed the handle on the Amana Microwave oven is broken and in need of repair. Observed two sets of two blodgett Ovens with deteriorated handle covers and are in need of replacement/repair. Observed the following on food contact surfaces and is not clean to sight or touch: Chef’s knife bag and knives with food crumbs coming in contact with the clean knives, in the main kitchen area. Large kettle on the back cooking/prep line in the main kitchen area, with accumulation of food debris on the interior and exterior and in need of cleaning. A visibly dirty steak knife stored directly on top of the steak knife dividing caddy near the three bay sink area in the main kitchen, and visible crumbs inside of the caddy, contaminating knives stored. A black mold-like substance on the interior of the ice scoop holder in the main kitchen, beside the ice machine. Four containers with lids, in the main kitchen area, stored inside, with visible food debris coming in contact with lids stored. Old Food Crumbs observed on dishes stored in several divided rolling dish racks at the dish machine area in the main kitchen area. Crumbs on the bottom interior of these same dish racks contaminating dishes stored. Dishes should be inverted to protect against future contamination. Black mold-like substance on the crash bars of the two Icetro ice machines in the back corridor. Ice Scoop holder with a brown mold-like substance on the interior and coming in contact with the ice scoop stored, in the back corridor. Three soda dispenser nozzles and holders at the bar area with a pink/brown mold-like substance on the interior of the nozzles. A build-up of dust and food debris on the soda gun holders. Two ice scoop holders with discarded straw papers inside and a slimy mold-like substance touching the scoops stored inside, at the bar area. Interior of Amana Microwave Oven with old dried food debris located in the main kitchen area. Most, not all, handles on refrigeration units, baine marie cooling units, freezer units are not being cleaned on a regular schedule with an accumulation of dried food debris. Observed accumulation of food debris on the top of the 6 burner gas stove on the cook line and in need of cleaning. Observed the exterior bottom of multiple round stainless serving pans stored on a shelf next to the large kettle, with accumulation of food debris on a non-food contact surface, with the possibility to contaminate. Observed clean dish racks stored on the floor at the dish machine area. The handwash sink in the back corridor near the ice machine area being used as a food preparation sink as evidenced by observed dried food in the sink. Observed hand-wash sink in the main kitchen very dirty with a dirty slime-like film at the faucet area and in need of cleaning. Observe hand-wash sink behind the bar is very slow draining and complete faucet is lose and in need of repair/replacement. Observed flooring in the back bar kitchen area is cracked, broken and missing pieces of tile and is not a smooth, easily cleanable surface. Also, wall trim and cove molding is being held together with black tape and in need of repair/replacement, in the back bar area. Observed flooring in the back corridor near the ice machine is cracked, broken and missing tiles and is not easily cleanable. Observed all but one door (including double doors) located in the back corridor area of the food facility has gaps and does not protect against the entry of insects, rodents, and other animals. Old unused equipment stored in various areas of the kitchen, catering area, bar area, and stock rooms, should be removed from food facility.

Observed two deeply scored cutting boards not resurfaced or discarded as required. Observed large accumulation of static dust on walls above Garland warming unit in the Bistro Grille.

The Grace Food Mart LLC, 257 Bow Creek Rd. Grantville, March 4. Pass. Observed sanitizer for three compartment sink used to clean/sanitize equipment completely empty and not available during all hours of operation. Observed numerous cleaning items/garbage items stored in three compartment sink and is in need of removal/cleaning. Observed multiple cleaning products and cleaning tools stored in handwash sink, indicating uses other than handwashing. Corrected on site. Paper towel dispenser empty at the handwash sink next to 3-bay sink. Corrected on site. Old unused equipment stored dirty in ware washing area, should be cleaned/covered or removed from facility.
