Cracker Barrel Old Country Store, 2525 Brindle Dr. Harrisburg, Complaint, February 28. Pass. No violations.

Downtown Deli & Eatery, 225 Market St. Harrisburg, February 28. Pass. ServSafe Food Safety Certification expired in 2021. Facility has 90 days to obtain a certified manager in food safety practices. Expired ServSafe Certificate needs to be renewed.

Freshido, 300 Market St. Harrisburg, February 28. Pass. Observed ice machine scoop lying on top of ice machine. Scoops must be stored in a container to prevent cross contamination with dust and particles. Manager corrected violation by placing scoop in the 3-bay sink for cleaning.

Giant Foods #6564, 6301 Grayson Rd. Harrisburg, February 28. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food employees observed in Sea and Land, kitchen and Deli areas, not wearing proper hair restraints, such as nets, hats, or beard covers. During the inspection the following brands yogurts were found expired: 24 Stonyfield smoothies’ strawberries 3.1 oz (02/20/2024-02/24/2024); 4 Disney Princess pouches mixed berry 3.5 oz (02/18/2024); 8 Stonyfield pouches strawberries 3.5 oz (02/20/2024); 6 Paw Patrol smoothies’ ruff-ruff raspberry 3.1 oz (02/27/2024); 12 Stonyfield smoothies’ strawberries banana 3.1 oz (02/21/2024-02/26/2024); 10 Chobani yogurt key lime 5.3 oz (02/25/2024-02/26/2024); 3 Chobani yogurt mango 5.3 oz (02/25/2024); 4 Chobani yogurt peach 5.3 oz (02/27/2024); 2 Chobani yogurt Raspberry 5.3 oz (02/27/2024); 3 Chobani yogurt less sugar yogurt wild blueberry 5.3 oz (02/24/2024); 3 Dannon yogurt blueberry 5.3 oz (02/24/2024). Discussed the situation with the supervisor and an internal verification of all dairy products was requested. Observed food ingredient storage containers, in the Bakery area, is not labeled with the common name of the food. Observed bread slicer in the bakery area with food residues and not clean to sight or touch. Observed two boxes, single-service, single-use articles stored in Bakery area directly on the floor, and not 6 inches above the floor. No sign or poster posted at the handwash sink in the family restroom to remind food employees to wash their hands.

Subway TBA P&P Foods, 301 Market St. Harrisburg, February 28. Pass. Clean utensils were stored in a container that had old food residue on the bottom. Storage containers must be cleaned periodically to prevent cross contamination.

Swatara Diner, 5610 Derry St. Harrisburg, February 28. Pass. Observed numerous food ingredient storage containers, within numerous refrigerator units, is not labeled with the common name of the food. Observed scoops stored within food containers not having a proper handle to remove food product. Observed wiping cloths in kitchen area, not being stored in sanitizer solution. facility educated ion how to prepare sanitizer solution. Observed boxes of food stored directly on the floor with-in dry storage area, rather than 6 inches off of the floor as required. Observed food (stew/sauces/cooked meat), a refrigerated, ready to eat time temperature control for safety food in the numerous refrigerated units, was not date-marked by with 7-day use or sell by date. Observed mop bucket having old murky water resting inside and needs to be emptied at this time. Also, water cannot be disposed of onto the outside pavement. Facility educated on how to properly dispose of water.

Hardee’s Of Harrisburg #1, 2203 Paxton St. Harrisburg, February 27. Pass. Facility does not have written procedures for employees to follow when responding to an event involving vomitus or fecal matter discharge onto surfaces within the facility. Observed inside top area of microwave, a food contact surface, has an large build-up of food residue and was not clean to sight and touch. Observed cooking equipment (fryers/refrigerators/fire flame grill, within kitchen area, has an large accumulation of food splash grease residue on non-food contact surfaces. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed caulking along three compartment sink has a large accumulation of black mold like residue and needs to be removed and replaced. Observed flooring Within walk-in cooler is buckled and coming apart and in need of repair. Food facility inspection indicates evidence of rodents activity in rear kitchen area (observed >50 rodent droppings), but facility does have a pest control program. Observed flooring within the entire rear kitchen area, has an large build-up of dirt, dust, trash and old food debris and in need of cleaning at this time.

JB Lovedrafts Micropub, 225 N. 2nd St. Harrisburg, February 27. Pass. Floor is cracked and has missing parts (divots) that may harbor crud and micro-organisms. Ceiling above food prep area is unfinished with second floor’s joists and plywood open and exposed to the kitchen beneath it. Rear external door has air gap at door jam and threshold plate that may allow pests into building. External doors must be sealed and secure.

New China Wok, 6301 Grayson Rd. Harrisburg, February 27. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food Employee observed changing tasks that may have contaminated hands without a proper handwash in-between. Observed different personal items (car keys, coats, caps, cell phone, glasses, clothes?…) around the facility (dry storage, kitchen, prep-table area). Food employees observed in kitchen area, not wearing proper hair restraints, such as nets or hats. Observed different type of food(shrimp, chicken wing, vegetable, dried mushrooms, flours…) around the facility (walk-in cooler, cooling and freezer unit, dry storage area, prep-kitchen area…) stored open with no covering. Observed food ingredient storage containers and bottles, through-out the facility, is not labeled with the common name of the food. Observed wiping cloths in an unclean condition in kitchen area. Observed wet wiping cloths in kitchen area, not being stored in sanitizer solution. Observed no date marking on any commercially processed refrigerated, ready to eat foods through-out the facility. Observed five plastic containers cracked, chipped, broken and discolored and should be discarded. Corrected on sight. Thermometers for ensuring proper temperatures of food are not available or readily accessible. Food facility is reusing utensil, which is intended to be a single-service or single-use article. Observed that boxes are being reused to store ready-to-eat food. Observed the following, throughout the facility area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces: Interior and exterior (especially the handle areas of the units) surfaces of all refrigeration equipment; All gaskets in all cooling and freezing unit; Interior, exterior and all sides of all cook line equipment; Walk-in cooler shelving racks; Storage/prep tables and all racks; Around all ware-washing area; Exteriors of multiple food containers; Storage area above the walk-in cooler. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Tableware for customer self-service is not displayed so that only handles are touched by consumers and employees. Observed ceiling tiles within kitchen area heavily soiled with water damage/broken and need replaced. Exit door located in the back area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals. Mops are not being hung to air dry.

Phillips Elementary School, 100 Oakmont Rd. Harrisburg, February 27. Pass. No violations.

Red Crab – Juicy Seafood, 3819 Union Deposit Rd. Harrisburg, Complaint, February 27. Pass. No violations.

Subway, 25 N. Progress Ave. Harrisburg, Follow-up, February 27. Fail. Observed the handle of a food utensil lying on top of roast beef. Manager corrected violation by placing utensil in 3-bay sink for cleaning. Food facility has lost its certified supervisory employee over 3 months ago and has not replaced the certified employee as required. Facility has 90 days to obtain a management food safety certification. PA Food Code requires a retail food establishment to have at least one management person to have a food safety certification. Food Safety Certification must be posted for public observation as required by the PA Food Code.

The Wharf, 6852 Derry St. Harrisburg, February 27. Fail. The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions. Food facility does not have a Health Awareness Reporting Procedure for food employees. Food employees observed on cooks line area, not wearing proper hair restraints, such as nets, hats, or beard covers. Facility does not have written procedures for employees to follow when responding to an event involving vomitus or fecal matter discharge onto surfaces within the facility. A food employee was observed touching/grabbing chips, a ready to eat food, with bare hands. Mechanical warewash equipment temperature measuring device for each wash/rinse is unreadable, cloudy and in need of repair. Observed loose/torn rubber door gaskets located on numerous cooling units. Observed mechanical warewashing unit having an large build up of filth(top/sides/underside) and not cleaned before use, and frequently throughout the day. The water temperature of the wash compartment of the manual warewashing faucet was 85-90°F, rather than not less than 110°F, as required. Observed can opener/blade and clean utensil storage bins, a food contact surface, was observed to have old caked on food residue and was not clean to sight and touch. Observed shelving unit surfaces not cleaned at a frequency to preclude accumulation of dirt and soil at the time of inspection. Food facility hot water heater is not producing enough hot water to supply kitchen area sinks at the time of this inspection. The handwash sink located within kitchen area does not have water at a temperature of at least 85°F. The floor/wall juncture in the kitchen area is not coved and closed to 1/32 inch. Observed wall within kitchen area, has a hole/broken and in need of repair. Old unused equipment stored on shelving unit located in kitchen area, should be removed from food facility. Observed flooring throughout the entire kitchen and walk-sin area has a large buildup of dirt, dust, trash and old food debris at the time of inspection.
