Commercially processed, refrigerated, ready-to-eat, time/temperature-control-for-safety food (hot dogs and sausages) in the walk-in cooler and held more than 24 hours not being date-marked. Food facility does not employ a certified food employee as required. Food facility has an employee who held a certified food manager certificate; however, the certificate has expired and is no longer valid. The facility has 90 days to enroll an employee in a state-recognized food safety course.

An employee’s open beverage container (twist-cap variety) was on a shelf above a food preparation area. Old food residue on round-plate blades, three metal food containers and a peeler that were stored as clean. Residue buildup on high-touch areas: control dials for heat control on the cook line and switches for the mechanical dishwasher. Hand-wash sink and toilet (employee restroom) are not being cleaned as often as necessary. An aerosol can of grill/oven cleaner stored on a shelf next to food equipment. An aerosol can of stainless-steel polish stored on top of the mechanical dishwasher.

Ranck’s Family Restaurant, 1233 Reading Road, Bowmansville, Feb. 21. Pass. Severely dented, swollen, distressed canned items in pantry area and intended for use or sale in the food facility. Items were voluntarily discarded and a guide for canned goods was provided. Assorted food in the bain-marie was held at 53-56 F, rather than 41 F or below as required; items were voluntarily discarded. The refrigerator will be evaluated and repaired as needed.
