The Pennsylvania Department of Agriculture, 866-366-3723, uses a risk-based inspection reporting process for restaurants and other food handlers.

Lin He Buffet, 421 Friendship Rd. Suite 1, Harrisburg, Complaint, Feb. 10. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed numerous food items in the walk-in cooler area stored open with no covering. Raw meats, egg rolls, General Tsoa Chicken, assorted desserts, etc. Several raw animal foods were stored above ready to eat foods in the walk-in cooler. Raw seafood over produce, a pan of raw fish stored directly in contact with General Tsoa Chicken, etc. Observed numerous food ingredient storage containers/bottles/shakers, in the kitchen area, is not labeled with the common name of the food. Including, but not limited to flour, corn starch, sugar, oil, assorted spices, etc. Observed food, in the buffet/self-serve area, is an unpackaged food stored or displayed in direct contact with ice. Food dispensing utensils in two containers of rice and sugar observed stored in the food with no handle single use cups left inside. Observed a spoon stored inside of a filling container in the walk-in cooler with the handle touching the food. Observed several plastic tubs and packaged food stored directly on the floor in walk-in cooler area, rather than 6 inches off of the floor as required. Observed no date marking on commercially processed refrigerated ready to eat and refrigerated ready to eat foods prepared in the food facility in the walk-in cooler. Loose/deteriorated rubber door gaskets observed on the Beverage Air three door baine marie cooling unit on the cook line. Observed deeply scored cutting boards not resurfaced or discarded as required on the three door Beverage Air three door baine marie cooling unit on the cook line. Observed manual can opener with accumulation on the blade and not clean to sight or touch. Corrected on sight. Observed two cleavers, a pizza slicer and a spoon stored on a magnetic holder at the cook line with food debris on the utensils stored. Corrected on sight. Observed a brown and black mold-like substance on the interior of the large ice machine in the back kitchen. Observed brown and black mold-like substance on the interior dispensing housing of the two Pepsi ice/soda dispensers at the wait station. Observed shelving, in back area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Also, dried, crumbling, dirty rubber matting is being used as shelf covering on some of the shelves and in need of removal. Observed the door located in the at the rear exit area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals.

Wendy’s 6408, 3925 N. Front St. Harrisburg, Feb. 9. Pass. There is one missing tile in the back room. Terra-cotta floor tiles need to be grouted in the clean-up area. This will be corrected in the near future when the facility renovates its kitchen area.

Fresh Mart DBA Darshaw Grocery Store, 4406 Oakhurst Blvd. Harrisburg, Feb. 6. Pass. No violations.

Hilton Garden Inn, 550 E. Main St. Hummelstown, Feb. 6. Pass. Observed numerous food ingredient storage containers/bottles, in the baine marie cooling units and on top of the baine marie cooling units on the cook line area, is not labeled with the common name of the food. Interior surface of Kenmore Elite chest feezer, located in the back dry stock area, is cracked and in need of replacement. Loose and broken door hinges observed on Kenmore Elite chest freezer in the back dry storage area causing an accumulation of ice build-up on the interior of the freezer and causing the lid to not close properly. Observed three stainless pans with assorted utensils (tongs, spoons, ladels, etc.) on a shelf next to the dish-machine, with accumulation of crumbs touching the utensils stored. Corrected on sight.

Parkside Hotel, 3 E. Derry Rd. Hershey, Feb. 6. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food Employee observed eating on the food prep table behind cook line. Food employees observed in cooking area, not wearing proper hair restraints, such as beard covers. Observed multiple food ingredient storage bottles and shakers behind cook line not labeled with common name of the food. Observed 3 wet wiping cloths behind the bar, not being stored in sanitizer solution. Commercially processed refrigerated, ready to eat, time/temperature control for safety food (chicken, beef), located in the upright two door refrigerator near the walk-in cooler, and held more than 24 hours, is not being marked with the date it was opened. Observed broken equipment (lid, grill press) no longer durable under normal use and are in need of replacement. Observed loose/deteriorated/missing rubber door gaskets on all cooling units and ice machine in the kitchen area. Observed heavy ice accumulation in walk-in freezer from the condenser to the floor and on food items stored on shelf below due to missing rubber door gaskets. Observed the following on food contact surfaces:; Large skewer used for smoker with accumulation of food/grease residue and not cleaned after every use; French fry cutter with accumulation of old food debris and not cleaned after every use; Large scoop for ice machine stored on top of the machine touching an unclean surface and not in holder; 3 small scoops for ice behind the bar stored on top of the ice holding unit touching an unclean surface and not in holder; Orange juice press behind the bar with accumulation of dry food residue and not cleaned at a frequency; Wooden knife holder not easily removable for cleaning and observed knives stored behind the holder touching the wall; Ladle stored on stove top burner touching an unclean surface; Interior top surface of microwave with accumulation of food residue and not cleaned at a frequency; Static dust along the wall above kitchen knives with possibility of contamination. Observed the following on non-food contact surfaces: Inside edges of mechanical dishwasher hood with accumulation of old food residue and is need of cleaning; Racks in sliding door refrigerator near kitchen entrance with old food residue with potential to contaminate food stored and are in need of cleaning; Catch tray for griddle overflowing with food debris and on to the floor; Heavy accumulation of dry food debris and grease between griddle and grill and are not being cleaned frequently; Heavy accumulation of food debris and grease underneath grill and fryers and are not being cleaned frequently; Open area behind small chest freezer by cook line with accumulation of food debris (rolls/ketchup bottles); Cooler behind bar with rusty bottom surface/racks and puddling. Observed handwash sink located near the mechanical dishwash machine with drain piping disassembled and not able to function properly. Observed wooden ramp being used for entrance to walk-in which is not a smooth and easily cleanable surface. When moved observed accumulation of old food debris underneath the ramp. Observed door located near the mechanical dishwasher has a gap and does not protect against the entry of insects, rodents, and other animals. Walls/panels in the dry storage hallway and wall near the entrance to walk-in cooler, has a hole, or is broken and in need of repair.

Pronio Market, 236 W. Caracas Ave. Hershey, Feb. 6. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. An open employee’s beverage container was observed in deli area, and walk-in cooler, a food preparation area. Raw eggs were stored above RTE foods in the walk-in cooler. Corrected on site. Utensils stored in chicken grinder being used in contact with food without being properly cleaned and sanitized prior to use. Single service, single use cups stored in bags of MSG, pepper, and paprika, and not with handle above the top of the food and the container. Observed wet wiping cloth in walk-in cooler, not being stored in sanitizer solution. Observed food stored directly on the floor in outdoor walk-in freezer, rather than 6 inches off of the floor as required. Loose rubber door gaskets observed on the walk-in cooling unit in the meat prep area and the produce area and are in need of replacement. Plastic containers used to store food located in walk-in cooler in the meat prep area, are not in good repair or condition. All broken equipment should be discarded. Observed the following on food contact surfaces and not clean to sight or touch: WALK-IN COOLER, Dirty butcher paper used on shelving with raw meats stored on it; SMALL COOKING AREA, 5 dirty knives and 2 spoons stored on dirty magnetic knife holder above two bay sink; Wall holding magnetic knife holder was dirty and need of cleaning; Spoon stored on ledge of oven, which is not a clean, sanitized surface. Observed old sticker residue on roller and catch bowl of Mettler Toledo auto labeler. Observed the following non-food contact surfaces with static dust accumulation and are in need of cleaning: Double light fixture above scale in meat prep area; Vent above stove in small cook area. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil throughout the entire facility. Numerous equipment, utensils, non-food contact items, food…etc. packed and stored together on shelving and floors in the back stock room and basement area. Observed single-service, single-use articles stored in the deli area, meat prep area, and back stock hallway directly on the floor, and not 6 inches above the floor. Observed floor in the walk-in cooler in the produce area to have divots and is not a smooth, easily cleanable surface. Observed cardboard being utilized as a floor covering in the walk-in cooler. Potential rodent harborage areas inside the food facility observed in the basement due to numerous rodent-like droppings on shelving used for food storage. Old unused equipment stored in all departments, back stock room, and basement area, should be removed from food facility.

Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the front display case, is not being date marked. Observed deeply scored cutting boards not resurfaced or discarded as required.
